Ingredients
- 2 - 3 sweet potatoes
- 1/2 stick of butter
- 1/2 cup of brown sugar
- 1/2 cup of granulated sugar
- 2 eggs
- 1/2 cup of heavy cream
- 2 Tbl spoon all-purpose flour
- 1 Tbl spoon vanilla extract
- 1 Tbl spoon of lemon juice
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- Pie crust (9” standard)
Steps
- Preheat oven to 350°F. Peel sweet potatoes and boil or microwave until soft enough to stick a fork in with no resistance.
- Allow potatoes to cool to room temperature. Whip them with electric hand mixer until smooth.
- Add in butter and mix until combined
- Add both brown sugar and granulated sugar and mix until smooth
- Add eggs and mix until smooth
- Add heavy cream, flour, lemon juice, vanilla extract, cinnamon, cloves, ginger, and nutmeg. Mix all until smooth and combined.
- Place pie crust into a deep 9-inch pie plate and crimp the edges.
- Add you sweet potato pie mixture and smooth over the top. Bake for 45-50 minutes until set. It is ready when butter knife or toothpick comes out clean.
- Allow pie to cool to room temperature
